Despite myriad differences in shapes, sizes, colors, textures and
avors, beans are surprisingly similar in nutrient composition. While beans are naturally low in calories, sodium and sugar, very low in fat and are cholesterol-free, they are also good to excellent sources of several key nutrients.
The Dietary Guidelines Advisory Committee Report determined

helps soften and reconstitute the beans, reduces cooking time, and enhances beans222 digestibility.
Beans will re-hydrate to at least 2-3 times their dry
sizes, so start with a large enough pot. Add 10 cups cold water for each pound of beans. Bring the water to boiling and simmer 4-hour soak is ideal, beans may be soaked 1-24 hours. Drain off the water and rinse the beans. Start with fresh water before cooking.
A longer soaking time (up to 4 hours) allows a greater amount of gas-causing
properties to dissolve in the water and improves beans222 digestibility. Soaking and then discarding the water, then soaking again, also helps.
After soaking, simmer beans in fresh water for about two hours, or until

The problem is that most Americans don''t get enough fiber to realize its potential benefits. The
typical American eats only about 11 grams of fiber a day, according to the American Dietetic Association. Health experts recommend a minimum of 20 to 30 grams of fiber a day for most people.
The Food and Drug Administration has recognized fiber''s importance by requiring it to be listed on the Nutrition Facts panel of food labels along with other key nutrients and calories. And, based on scientific evidence, the agency has approved four claims related to fiber intake and lowered risk of heart disease and cancer.
One claim states that dietary soluble fiber, when part of a diet low in saturated fat and cholesterol, may reduce the risk of coronary heart disease. In 1997, FDA approved this claim for certain foods containing whole oats and in 1998, for certain foods containing psyllium seed husk.
